Ayurvedic breakfast: 6 great & delicious recipes to follow

An Ayurvedic breakfast is an ideal start to the day - it's light, yet nourishes and energises us. If you are particularly mindful, you can balance all three doshas and stimulate the digestive fire (Agni). A great start to the day! Breakfast tips: how to start the day well

If you want to enjoy a truly balanced Ayurvedic breakfast, then pay attention to the following:

  • Natural, fresh ingredients
  • Seasonal products
  • Light, warm dishes
  • Not too much
  • Do not mix dairy products with sour fruits

Especially in the winter months, you can eat more than in the summer. A good "starter" before the real breakfast is a glass of warm water with lemon or ginger. This mixture activates your Agni and prepares your stomach for food intake - in addition, you counteract the loss of fluids during the previous night.

Now for our recipe ideas - have fun trying them out and enjoying them:


1. sonnhof classic: date-plum cream

Our own recipe from our Sonnhof cookbook is easy to make and wonderfully delicious:

Ingredients:

  • 200g dried dates (pitted)
The popular date-plum-cream breakfast comes from our Sonnhof Ayurveda cookbook and is a true classic.
  • 200g dried plums
  • Water
  • 200ml cream or soy cream
  • 1 tbsp freshly grated ginger
  • or 7 ground peppercorns
  • Preparation:

    • Halve the plums and pit the dates.
    • Chop everything as you like.
    • Soak together in water for several hours until the fruits are completely soft. Tip: the water should just cover the fruit.
    • Now squeeze out the juice of the ginger.
    • Mix this or pepper with cream and the fruit.
    • Let everything stand for 30 minutes.
    • Enjoy Ayurvedic breakfast!

    Why is this recipe Ayurvedic?

    This simple recipe is especially good for Vata, and this breakfast is also pleasant for Pitta. If you are Kapha, you should enjoy it in small quantities. Tip: add 15 ground black peppercorns and ½ tsp ground cinnamon.

    It is Ayurvedic because it is much less stressful on your body than our typical western breakfast of bread, jam, egg, and so on. In this way, you don't slow down your Agni from the very beginning of the morning, but rather fire it up! This way you start the day full of energy!

     


     

    2nd breakfast recipe: Cereal porridge with spices & fruit

    Ingredients:

    The cereal porridge with spices & fruit addresses all doshas.
    • 1 handful of oat flakes (or spelt, barley, wheat, etc.)
    • Fruit (preferably seasonal & regional)
    • 1 glass warm water
    • 1 glass of oat milk (other plant milks are also welcome)
    • Spices: e.g. fennel, cardamom & anise or cloves & cinnamon (great in winter!)
    • Sweetness (optional)

    Preparation:

    • Heat a saucepan over medium heat.
    • Add the spices and toss everything briefly.
    • Now add the oat flakes - mix everything together well.
    • Steam the whole thing a little until the scent spreads throughout the room.
    • Then deglaze with warm water until the flakes are covered.
    • Let everything continue to simmer on low to medium heat - the water should have evaporated completely & the flakes should already be slightly soft.
    • Then add the glass of oat milk.
    • Let everything simmer until your ideal breakfast porridge is ready!
    • In the meantime, you can prepare your fruit: either simply sauté it in the pan, or fry it with a little ghee, oil or margarine, or even butter. Arrange everything nicely together & your delicious and nutritious breakfast is ready!

    Why is this recipe Ayurvedic?

    This can be explained quite simply. For one thing, breakfast appeals to all doshas - especially Vata types. For Pittas, raw food is also quite suitable - but then not in combination with the cereal porridge. Kapha people may already be satisfied with the morning lemon water.

    Otherwise, breakfast is especially great because it is warm in the Ayurvedic sense. In winter as well as in summer, a warm breakfast is simply ideal!


    3. spelt porridge with freshly grated apple

    Freshly grated apple gives the porridge a delicious freshness

    Ingredients:

    • Freshly ground spelt
    • Freshly grated apple
    • Some ghee
    • Ground cardamom and cinnamon
    • Fresh ginger
    • Sultanas
    • Maple syrup or other natural sweetener
    • Some water

    Preparation:

    • Simmer the ground spelt in the water.
    • Once the porridge has reached the desired consistency, sultanas, grated apple, various spices, ghee, ginger and a little maple syrup can be added as desired.


    Breakfast recipe: Quinoa-green spelt porridge with fruit

    Ingredients:

    • 125g quinoa
    • 1 cup green spelt (unground)
    • 1 Apple
    • 1 pear
    • 1 nectarine
    • 1 handful of grapes
    • 1 handful blueberries
    • Spices: Cinnamon, cardamom, cloves
    • Thick juice (agave syrup)
    • Water

    Preparation:

    • Bring the green seeds to the boil with twice the amount of water.
    • Simmer over a low heat for about 25 minutes.
    • Meanwhile, simmer the quinoa in a large saucepan over medium heat for 15 minutes.
    • Take the fruit of your choice and cut it into bite-sized pieces.
    • You can then heat this carefully in a pot and stir occasionally until it seems soft enough.
    • Now add the agave syrup and your spices to taste.
    • Arrange the fruit on top of your quinoa-green spelt porridge and eat your breakfast dish, preferably still warm!

    Why is this recipe Ayurvedic?

    This breakfast is also warm and therefore particularly digestible. Heating the fruit removes the acidity, which makes it easier to digest. Especially in the morning, your stomach is not burdened - and it also tastes good.

     


     

    Breakfast recipe: Rice buckwheat with cocoa

    Ingredients:

    • 6 tbsp buckwheat

  • 1 cup wholemeal round rice
  • 1 Apple
  • Dried apricots
  • A little apple juice
  • Small piece of ghee/butter
  • Cardamom
  • Lemon juice
  • Grated lemon peel
  • Cocoa
  • Pine nuts
  • Preparation:

    • Heat the apple juice in a saucepan.
    • Cut the apples and the apricots into small pieces: simmer gently.
    • Add ghee/butter, cardamom, cocoa & lemon peel.
    • Now liquefy the compote (if necessary) with a little water.
    • Now toast the buckwheat briefly (without fat!).
    • Now you can add the wholemeal round rice and simmer together for 10 minutes.
    • Serve the porridge together with the compote and garnish with the pine nuts.
    • Enjoy your meal!

    Why is this recipe Ayurvedic?

    This recipe is just as light and warm for your stomach. Together with natural, fresh and seasonal products, you are optimally prepared for the day. You are satiated, but not over-satiated and have enough energy! We hope you enjoy trying it out!


    6. coconut oat porridge with fresh fruit

    Ingredients:

    • Oatmeal
    The coconut flavour offers a great change from classic porridge recipes.
  • Coconut flakes
  • Coconut flour
  • Star anise
  • Ghee
  • Coconut milk
  • Fresh fruit to decorate
  • Preparation:

    • Melt the ghee in the pan.
    • Add the oat flakes and toast lightly until it smells good.
    • Then add 1 tbsp coconut flakes and 1 tbsp coconut flour and stir well.
    • Add the star anise and pour in the coconut milk.
    • Stir vigorously so that nothing burns.
    • To sweeten the porridge, you can add a little maple syrup or other natural sweeteners.
    • The porridge can be served with fresh fruit.
